Speedy Rice Supper

Ingredients:

500 g SunRice Calrose white rice

2 Tbsp canola oil

4 rashers 97% fat-free bacon, trimmed and chopped

2 onions, chopped

1 cup chopped green or red capsicum

1 clove garlic, crushed

300 g chopped cooked chicken, no skin

1/4 tsp pepper

1 Tbsp salt-reduced soy sauce

2 tomatoes

1 cup mushrooms, sliced (120g)

15 g peanuts


Directions:

Cook rice by rapid boil method. Allow to drain well in colander and keep warm.

In frypan, heat 1 tablespoon of oil, add bacon, onions, capsicum and garlic, fry till bacon is golden. Add 2/3 of the chicken to vegetable mixture and toss till heated.

Add extra oil to pan, add rice and lightly toss (do not stir) with egg slice or fork till rice and vegetable-chicken mixture is blended. Season to taste with pepper and soy sauce.

Spoon ring of reserved chicken onto rice, then add ring of chopped tomato. Spoon mushrooms into centre of pan. Garnish with nuts and parsley. Serve directly from the frying pan.

Really yummy. I always add plenty of chopped fresh parsley to this.
