
Rice Salad with Apple and Nuts

Ingredients:30 g whole almonds 4 cup cooked brown rice 6 spring onions, finely sliced 4 Tbsp currants 1 Granny Smith apple, cored and diced (leave skin on) 1 Jonathan apple, cored and diced (leave skin on) 2 sticks celery, sliced 3 Tbsp chopped parsley 3 Tbsp lemon juice (dressing) 40 mL olive oil (dressing) 1 pinch of sugar, salt and black pepper Directions:Heat the oven to 180°C and place the almonds on a baking tray.
