Ingredients:1 Tbsp olive oil 1 onion, chopped 2 cloves garlic, chopped 2 chicken breast fillets, diced 3 cup Sunwhite Long Grain Rice 5 cup chicken stock 1 pinch saffron threads, dissolved in 1 tablespoon water 1 kg assorted seafood (e.g. green prawns, octopus, calamari, mussels) 1 green capsicum, sliced 1 cup green peas 100 g sliced pepperoni Directions:Heat oil in a paella pan or large heavy-based frying pan.
