Paella

Succulent seafood soaked in a savoury sauce.

Ingredients:

1 Tbsp olive oil

1 onion, chopped

2 cloves garlic, chopped

2 chicken breast fillets, diced

3 cup Sunwhite Long Grain Rice

5 cup chicken stock

1 pinch saffron threads, dissolved in 1 tablespoon water

1 kg assorted seafood (e.g. green prawns, octopus, calamari, mussels)

1 green capsicum, sliced

1 cup green peas

100 g sliced pepperoni


Directions:

Heat oil in a paella pan or large heavy-based frying pan. Saute onion, garlic and chicken until chicken is browned. Add rice and coat in the oil.

Add stock and saffron and smooth out the surface of the paella.

Arrange the seafood, capsicum, peas and pepperoni in the paella. Cook over a very gentle heat for 15 minutes or until all the stock has been absorbed and the seafood is cooked.

Unfortunatley I did not like this recipe enough to make it again. It wasn''t bad but I thought it lacked flavour.
