Pasta bathed in a spicy blackbean sauce.

Ingredients:

250 g packet Orgran Vegetable Rice Spiral Pasta, or other Orgran Rice Pasta of your choice

200 g ripened tomatoes

2 green shallots, sliced

2 garlic cloves, crushed

1 fresh red chilli, chopped

1/4 cup sundried tomatoes, drained, sliced

2 Tbsp olive oil

1 Tbsp fresh basil, chopped

2 Tbsp tomato paste

1/2 cup water

1/2 tsp vegetable stock*

30 g black beans, salted

1/3 tsp ground ginger

1 green shallot, chopped, extra


Directions:

Add Orgran Pasta to large pot of boiling water and cook according to instructions on the packet, drain, rinse under warm running water, drain.

Heat oil in wok or pan. Add chillies, garlic, sun-dried tomatoes, shallots, basil, ginger and beans, stir-fry for 1 minute. Add pasta, gently stir-fry until hot.

Blend or process tomatoes until smooth, add to wok with tomato paste, water and vegetable stock. Stir-fry until hot.

Serve sprinkled with extra shallots.
