
Potato and Vegetable Lasagne

Ingredients:1 kg Royal Blue or Ruby Lou potatoes, thinly sliced 1 Tbsp fresh parsley, chopped 1 Tbsp fresh oregano, chopped 1 Tbsp fresh thyme, chopped 100 g pitted Kalamata olives, sliced 1 small onion, thinly sliced 1 pinch of salt & pepper, to taste 1 jar (550g) Italian pasta sauce, salt-reduced 100 g Italian sausage, sliced lengthways 1 coat of olive oil spray Directions:Place potato slices in a large mixing bowl, adding herbs, olives, onion and a little salt and pepper.
