Penne with Asparagus and Bacon

A delicious low fat pasta dish with bacon and fresh asparagus.

Ingredients:

120 g penne

125 g bacon or pancetta, cut crosswise into 1 cm matchsticks

1 medium onion, finely chopped

3 cloves garlic, finely chopped

500 g asparagus, trimmed and cut on the diagonal into five lengths

1 tsp salt and freshly ground black pepper to taste

2 lemons, juiced

1 lemon, zest

1/2 cup freshly torn basil leaves


Directions:

Cook the pasta in plenty of rapidly boiling salted water.

Grill the bacon until crispy. Drain on paper towels.

Spray a frying pan with olive oil spray and cook the onion and garlic until soft. Add asparagus and saute, stirring until tender but still crisp ('al dente'), about three to four minutes. Season to taste.

Drain the pasta, reserving a little of the pasta cooking water. Toss pasta and pasta cooking water together with the asparagus mixture.

Stir through the lemon juice, zest and basil. Season well. Just before serving, toss through the bacon and basil.

I LOVE THIS RECIPE! I made it last night and its so yum! I added a tablespoon of extra light sour cream and that made it!
