Tasty pasta dish served with a delicious creamy tomato sauce.

Ingredients:

300 g pasta

150 mL light evaporated milk

200 g chopped pumpkin

1 can (410g) crushed, flavoured tomatoes (eg. basil and oregano)

250 g skinless chicken breast, diced

35 g slivered almonds

1 small onion, diced

1 medium carrot, diced

1/2 cup diced capsicum

60 g turkey bacon, chopped


Directions:

Lightly spray a non-stick frying pan with spray oil and heat pan. Cook onion until it starts to brown, add chicken breast and bacon, cook until brown and cooked through.

Meanwhile in a pot, boil carrot and pumpkin until they start to soften, drain. Add capsicum, carrot and pumpkin to cooked chicken, onion and bacon pieces.

Add cooked pasta, evaporated milk, and tomatoes. Heat thoroughly. Serve sprinkled with almonds.
