Low-fat Spaghetti Carbonara

A low-fat version of everyone's favourite pasta dish.

Ingredients:

1 packet (250g) 97% fat-free bacon, chopped

7 oz mushrooms, sliced

1 tsp minced garlic

1 medium onion, chopped

1 egg (50g), lightly beaten

1 packet (350g) spaghetti

1 quantity water, to boil spaghetti in

2 cup white wine

4 tsp parmesan cheese, shaved

1 coat of olive oil spray

Directions:

Cook spaghetti according to packet instructions.

Spray a non-stick pan with olive oil spray and cook garlic and onion until onion is transparent. Add bacon and cook for a few minutes. Add mushrooms and cook until partially cooked. Turn down heat, add wine and simmer.

Drain pasta. Stir egg into drained pasta. Mix through carbonara sauce and serve each bowl topped with a teaspoon of parmesan cheese.
