
Gnocchi with Tomato and Fresh Basil Salsa

Ingredients:350 g mashed Royal Blue potato 1 egg, lightly beaten 1 1/4 cup plain flour 2 onions, sliced 2 cloves garlic, crushed 2 tsp oil 1/4 cup dry white wine 400 g tinned tomatoes, chopped 2 Tbsp tomato paste 2 tsp brown sugar 2 Tbsp fresh basil, finely chopped Directions:When mashed potato has cooled slightly, add the lightly beaten egg and gradually add flour. To make gnocchi, knead into a ball and separate into 6 equal portions. Roll each portion into a 1cm think roll and cut into small pieces. Cook in batches in boiling salted water for 10-15 minutes. When the gnocchi float to the surface they are ready. Variations:Sprinkle with freshly grated parmesan cheese, if desired. Serving suggestion not included in nutritional information. Author:
