Fettuccine with Mushrooms and Bacon

Ingredients:

350 g fettuccine pasta

1 Tbsp olive oil

1 onion, finely chopped

1 clove garlic, crushed

200 g bacon, trimmed and chopped

2 cup sliced mushrooms

200 g light sour cream

1 freshly ground black pepper, to taste


Directions:

Cook fettuccine according to directions on the packet. Heat butter in frying pan. Add onion, garlic and bacon. Cook on low heat for 5 minutes, stirring occasionally.

Add mushrooms and pepper to taste. Cook a further 5 minutes. Add light sour cream. Heat through only. Toss the fettuccine through the sauce and serve sprinkled with parsley.

Variations:

Serve with grated parmesan cheese, if desired. Serving suggestions not included in nutritional information.

I found this recipe pretty dry. It could have done with a little more sauce.
