Something different for chilli mussels!

Ingredients:

200 g penne pasta

1/2 cup white wine

1/2 cup water

500 g mussels, scrubbed and beards removed

1 red onion, thinly sliced

1 grated rind and juice of lemon

1 Tbsp olive oil

1 green chilli, deseeded and finely sliced

1/3 cup freshly chopped basil

1/2 cup freshly chopped parsley


Directions:

Cook pasta according to instructions on the packet.
Meanwhile, cook mussels by placing wine and water in a large, deep saucepan. Heat until boiling. Add cleaned mussels.

Cook for 3 - 5 minutes or until shells have opened. Remove from pan with slotted spoon. Cool. Take mussel meat from shells, reserving eight mussels in shell.

In a serving bowl combine cooked pasta, red onion slices, rind and juice of lemon, olive oil, chilli, herbs and mussel meat. Mix well.
Serve salad with reserved mussels in shells arranged on top.

Avoid using the lemon zest, without anything to cut it down, it dominates without any counterbalance of flavour to bring it back. I suggest leaving it out altogether or if you want the lemon, I might try adding the zest to the mussels, rather than the dish itself.
