Creamy bacon and onion sauce tossed through steaming pasta.

Ingredients:

175 g spaghetti

1 quantity water, to boil spaghetti in

1 medium onion, chopped

100 g 97% fat-free bacon, chopped

1 egg (50g)

80 mL reduced-fat evaporated milk

50 g reduced-fat cheese


Directions:

Cook spaghetti as directed on the packet.

In a non-stick pan, saute bacon and onion until cooked (about 4 minutes).

Whisk egg and milk; add cheese.

Toss bacon and onion through hot pasta, add milk mixture and return to low heat. Stir through for 1 minute.

Serve hot.

I have a similar recipie, but I don''t use the cheese or the egg and substitute the bacon for 50g of ham, also add some chicken for extra protien.

I left out the onion and added swiss mushrooms instead. I also used parmesan instead of regular cheese for extra flavour. Delicious!!

Really nice: exchange reduced-fat cheese for low fat ricotta for a creamier sauce

I use a small bit of parmesan rather than regular cheese. Lowers the cals and fat without losing flavor.
