
Warm Lamb Pasta Salad

Ingredients:500 g lean lamb backstraps, trimmed of fat 300 g penne pasta 100 g baby spinach leaves 80 g kalamata olives 250 g punnet cherry tomatoes, halved 1 small red onion, cut into thin wedges 80 mL low-fat salad dressing, French or Italian Directions:Spray lamb with oil. Place in a pan preheated to a medium heat. Cook for 3-4 minutes each side for medium (about 2cm thick) or to preference. Cover and rest for 10 minutes.
