Warm Lamb Pasta Salad

Lamb, spinach, olives and tomatoes come together with pasta for a healthy salad.

Ingredients:

500 g lean lamb backstraps, trimmed of fat

300 g penne pasta

100 g baby spinach leaves

80 g kalamata olives

250 g punnet cherry tomatoes, halved

1 small red onion, cut into thin wedges

80 mL low-fat salad dressing, French or Italian


Directions:

Spray lamb with oil. Place in a pan preheated to a medium heat. Cook for 3-4 minutes each side for medium (about 2cm thick) or to preference. Cover and rest for 10 minutes.

Meanwhile cook the pasta in a large saucepan of boiling water according to packet instructions. Drain and rinse under cold water.

Place pasta in a large bowl with the spinach, olives, tomatoes and onion. Cut the lamb into 1cm thick slices and toss through the salad with your favourite low fat dressing.
