Sauteed Apricot Brandy Lamb

Ingredients:

420 g jar Golden Circle Apricot Brandy Obsessions, strained and syrup reserved

300 g lean lamb fillets

2 cloves garlic, crushed

1 Tbsp soy sauce

1 Tbsp tomato sauce

1 Tbsp sweet chilli sauce

1 Tbsp olive oil

2 tsp cornflour

1/2 cup chicken stock


Directions:

Combine Obsessions syrup with garlic, soy, tomato sauce, chilli sauce and olive oil and marinate fillets for at least 15 minutes.

Remove meat from marinade and pan fry fillets for 2-3 minutes, turn and cook further 2 minutes.

Return marinade to pan with Obsessions fruit and blended cornflour and chicken stock. Simmer gently until sauce thickens and meat is cooked to taste.

Serve hot with rice or noodles.

Variations:

Chicken or pork fillets can be used instead of lamb; adjust nutritional analysis accordingly.
