Stir-frying is a fast way of cooking a healthy, delicious meal.

Ingredients:

2 Tbsp soy sauce, salt-reduced

2 Tbsp oyster sauce

2 Tbsp honey

300 g lamb loin or fillets, thinly sliced

2 Tbsp peanut oil

1 brown onion, cut into wedges

300 g button mushrooms, halved

1 bunch broccolini, washed and chopped

1 red capsicum, thinly sliced


Directions:

Combine soy sauce, oyster sauce and honey in a medium bowl. Add lamb and toss well to coat. Drain, reserving the marinade.

Add half the oil to a wok and heat over high heat. Add the lamb and stir-fry for 2 minutes or until brown. Remove to a plate, cover and keep warm.

Add remaining oil to wok and stir-fry onion for 1- 2 minutes. Add mushrooms and broccolini and stir-fry for 1-2 minutes. Add capsicum, reserved marinade and lamb and stir-fry for 2 minutes or until capsicum is tender.

Variations:

Serve with steamed rice, if desired. Serving suggestion not included in nutritional information.
