Ingredients:

2 pears, peeled and sliced

1/2 cup orange juice

1/2 cup chicken stock, salt-reduced

1/2 cup water

600 g lamb fillets, lean, trimmed

2 cloves garlic, crushed

2 tsp wholegrain mustard

1 Tbsp cornflour


Directions:

Combine pear slices with orange juice, stock and water in a saucepan. Bring to the boil. Simmer until pears are just tender. Remove pears with a slotted spoon.

Reserve cooking liquid. Spray oil in a frying pan. Cook fillets until golden. Remove and keep warm. Add garlic and mustard to the pan. Stir in reserved liquid, blended with cornflour. Stir until mixture boils and thickens. Add pear slices. Serve lamb fillets with mustard pear sauce and steamed vegetables.
