
Lamb Tabouleh

Ingredients:2 cup couscous 2 cup boiling chicken or vegetable stock, reduced-salt 6 medium ripe tomatoes, diced 1 cup chopped parsley 1 cup chopped mint 1/2 cup sliced spring onions 1 Tbsp olive oil 2 Tbsp lemon juice 4 lean lamb fillets, grilled and sliced into serving pieces 1 freshly ground black pepper, to taste Directions:Place couscous in a heatproof bowl. Pour hot stock over and cover. Leave for about 5 minutes so that liquid is absorbed. Allow to cool. Place couscous into a serving bowl. Variations:Serve with crusty bread, if desired.
