A refreshing middle eastern dish. It has lots of fresh and healthy herbs!

Ingredients:

2 cup couscous

2 cup boiling chicken or vegetable stock, reduced-salt

6 medium ripe tomatoes, diced

1 cup chopped parsley

1 cup chopped mint

1/2 cup sliced spring onions

1 Tbsp olive oil

2 Tbsp lemon juice

4 lean lamb fillets, grilled and sliced into serving pieces

1 freshly ground black pepper, to taste


Directions:

Place couscous in a heatproof bowl. Pour hot stock over and cover. Leave for about 5 minutes so that liquid is absorbed. Allow to cool. Place couscous into a serving bowl.

Gently stir in tomatoes, parsley, mint, spring onions, olive oil and lemon juice. Add cracked pepper to taste. Top with lamb pieces and serve.

Variations:

Serve with crusty bread, if desired. Serving suggestion not included in nutritional information.
