Hearty meatballs with flavoured rice, just right!

Ingredients:

2 cup long grain rice

500 g lean lamb mince

1 tsp cumin

1 tsp coriander

1 onion, finely diced

1/3 cup finely chopped coriander or parsley

1 freshly ground black pepper, to taste

1 Tbsp vegetable oil

1 clove garlic, crushed

4 ripe tomatoes, chopped

1 tsp cumin seeds

2 Tbsp freshly squeezed orange juice

1 tsp grated orange rind


Directions:

Cook rice according to directions on the packet. Keep warm. Combine mince, spices, ¾ onion, half the coriander or parsley and pepper in a bowl. Mix thoroughly. Roll mixture into small balls. Heat oil in frying pan. Add meatballs and cook for 2 - 3 minutes or until well browned. Remove from pan. Drain on paper towels. Add remaining onion and garlic to pan. Cook for about 1 minute, stirring. Add tomatoes. Simmer for about 4 minutes.

Return meatballs to pan. Cover and cook for about 5 - 6 minutes. Stir cumin seeds, orange juice, rind and remaining herb through warm rice. Serve hot meatballs with tomato mixture on a bed of cumin rice.

Variations:

Accompany with a fresh green salad. Serving suggestion not included in nutritional information.
