
Lamb Meatballs with Cumin Rice

Ingredients:2 cup long grain rice 500 g lean lamb mince 1 tsp cumin 1 tsp coriander 1 onion, finely diced 1/3 cup finely chopped coriander or parsley 1 freshly ground black pepper, to taste 1 Tbsp vegetable oil 1 clove garlic, crushed 4 ripe tomatoes, chopped 1 tsp cumin seeds 2 Tbsp freshly squeezed orange juice 1 tsp grated orange rind Directions:Cook rice according to directions on the packet. Keep warm. Combine mince, spices, ¾ onion, half the coriander or parsley and pepper in a bowl. Mix thoroughly. Roll mixture into small balls. Heat oil in frying pan. Add meatballs and cook for 2 - 3 minutes or until well browned. Remove from pan. Drain on paper towels. Add remaining onion and garlic to pan. Cook for about 1 minute, stirring. Add tomatoes.
