Lamb Kebabs

Basted lamb and vegetable kebabs.

Ingredients:

500 g lean lamb cubes

250 g cherry tomatoes

250 g button mushrooms

250 g zucchini, cut into chunks

3 Tbsp honey

140 g red and green capsicum, cut into pieces

2 tsp soy sauce, salt-reduced

1/2 tsp ground ginger

1 tsp ground garlic


Directions:

Baste: In a small bowl combine honey, soy sauce, garlic and ginger.

Alternately thread lamb, tomatoes, mushrooms, capsicum and zucchini onto skewers or wooden kebab sticks. Brush kebabs with baste.

Grill or barbecue kebabs over a high heat for 8-10 minutes or until cooked to your liking, brush with baste and turn frequently during cooking.

Serve immediately with salads.
