Jazz up lamb chops with this fruity nectarine salsa!

Ingredients:
8 lamb chop
3 ripe nectarines, stone and diced
1 orange, flesh and juice
1 tsp grated fresh ginger
3 spring onions, sliced
1 freshly ground black pepper
Directions:Grill lamb chops for 4 minutes each side or until cooked.
To make salsa, combine nectarines, orange flesh, juice and ginger in a serving bowl. Mix well. Stir in spring onion and freshly ground black pepper.
Serve immediately or refrigerate before use. Serve with salsa over lamb, accompanied with oven-baked potato wedges.
