Strips of lamb marinated in mango chutney and wrapped in lavash bread.

Ingredients:

100 g lean lamb steak

2 tsp lemon juice

1 tsp tomato paste

1 tsp mango chutney

1 Tbsp water

2 lettuce leaves, shredded

2 spring onions, sliced

2 Tbsp barbecue sauce

1 medium tomato, diced

2 sheets lavash bread (60g each)


Directions:

Slice lamb lengthwise into four strips. Thread each strip onto a wet skewer. Lay kebabs onto a shallow dish.

In a small bowl, combine lemon juice, tomato paste, mango chutney and water. Stir until combined and pour over kebabs. Put aside to marinate for 30 minutes or more.

Place kebabs on an oven tray. Cook kebabs under the grill (medium heat), basting with remaining marinade.

To Serve:
Spread lavash bread with barbecue sauce (or hommus).

Place grilled lamb on lavish bread. Sprinkle with chopped onion, diced tomato, and shredded lettuce.

Using grease proof paper, carefully roll up Doner Kebab.
