Tender lamb with a hint of the tropics.

Ingredients:

450 g can Golden Circle Crushed Pineapple

2 cloves garlic, crushed

1 Tbsp chilli sauce (or to taste)

1 Tbsp salt-reduced soy sauce

2 Tbsp tomato sauce

8 lamb cutlets or chops, trimmed


Directions:

Combine pineapple, garlic, chilli, soy and tomato sauces and marinate lamb (if time permits).

Drain lamb, reserving marinade.

Heat pan and grill lamb 2-3 minutes each side, or until cooked to liking.

Remove lamb and return marinade to pan. Simmer 2-3 minutes until sauce bubbles and thickens.

Spoon sauce over lamb and serve with rice or potatoes.
