Stir-fried beef with fragrant Moroccan spices and almonds

Ingredients:
500 g beef stir-fry strips
1 Tbsp olive oil
1 tsp crushed garlic
1 onion, chopped
1/3 cup slivered almonds
1 tsp ground turmeric
1 tsp ground cumin
1 Tbsp sugar
400 g can tomatoes, with their juice
60 g spinach, shredded
1/2 cup sultanas
Directions:
To prepare beef strips, put recommended cut, covered, into freezer until firm (about 30 minutes). Slice across the grain of the steak in very thin strips.
Mix beef strips with half oil and garlic.
Heat wok or frypan on high (no need to add any extra oil). Stir-fry beef strips in small batches for 1-2 minutes. Remove when cooked and allow pan to reheat before stir-frying next batch.
Heat remaining oil in pan. Stir-fry onion, almonds and sultanas for 1-2 minutes. Return stir-fried beef strips.
Add turmeric, cumin, sugar, tomatoes and spinach. Allow to heat through, about 1-2 minutes.

Add 1 1/2 cups of pumpkin (steam in microwave for 2 min 30) and add after onion (add a cinnamon stick to mixture). After adding tomatoes & spices, cook for 10 minutes, then add spinach. Cook for a few more minutes. Remove cinnamon stick - good served with either couscous or brown rice.
Substitute sultanas with chopped prunes.
