
Whiting with Chilled Mushroom and Parsley Dressing

Ingredients:1 cup sour light cream 1 clove garlic, crushed 1 Tbsp lemon juice 1 tsp finely grated lemon rind 2 cup finely sliced mushrooms 400 g whiting fillets 1 egg, lightly beaten 1 cup fresh white breadcrumbs 2 Tbsp olive oil 1 plain flour Directions:Place sour light cream in a saucepan. Add crushed garlic. Simmer very gently for about 2 minutes, stirring. Do not boil. Add lemon juice, lemon rind, mushrooms and parsley.
