Tuna & Corn Patties

Moist and sweet fish patties.

Suggestions:

Pre-cook potato and mash.

Ingredients:

185 g can tuna in springwater, drained and flaked

1/4 cup grated reduced fat cheddar cheese

1/2 cup corn kernels

1 cup mashed boiled potato

1 egg, lightly beaten

1 cup rolled oats

4 spring onions, chopped


Directions:

Combine all ingredients together in a bowl, mixing until well combined.

Divide mixture into 6 equal portions and form into patties. Cook in a non-stick frypan on a medium heat for 3-5 minutes or until golden brown on both sides.

Serve with garden salad and crusty bread.

I also doubled the recipe, and it too was a hit.. Definately a keeper!!

I tried this recipe tonight for dinner and the whole family loved these patties! I doubled the mix to make 12 patties each 100g in weight and this used up all the mix perfectly. Definitely something that I will make again - was a hit with the kids! :)
