Ingredients:

4 white fish fillets

2 Tbsp reduced-fat ricotta cheese

1 freshly ground black pepper, to taste

2 Tbsp lemon juice

1 avocado, mashed

1 Tbsp sweet chilli sauce

1 Tbsp finely chopped parsley

4 brown bread rolls, halved

1 ripe tomato, sliced

4 cup mushrooms, finely sliced

1/2 red onion, sliced

1 alfalfa sprouts


Directions:

Heat a non-stick frying pan and brush lightly with a little oil. Place fish fillets in pan. Cook for about 3 minutes each side or until fish is tender.

Meanwhile, combine ricotta cheese, black pepper, lemon juice, avocado, chilli sauce and parsley in a bowl. Mix well. Spread the eight bread roll halves with the avocado mixture.

Place one fish fillet on one bread roll half. Repeat with other fillets and bread roll halves. Top with tomato slices, mushrooms, onion and sprouts. Place top bread roll half on each to make burgers. Serve immediately.
