This dish is a super spicy alternative to plain-coated fish. Make the coating as hot or as mild as you wish.
Suggestions:
You can make cajun-flavoured breadcrumbs by combining cajun seasoning with breadcrumbs.
Lower-fat fish varieties include Barramundi, Perch, Snapper and Bream.

Ingredients:
4 fish fillets, about 100g per fillet
1/4 cup plain flour
1 egg, lightly whisked
1/2 cup cajun-flavoured breadcrumbs
1 Tbsp olive oil
Directions: Coat fillets first in flour, then egg, then breadcrumbs
Heat oil in a pan over medium heat.
Cook for 2 to 3 minutes each side, or until cooked through.
Variations:

By: nona - 2008-09-24 I like the idea of being able to make the cajun seasoning as hot or as cool as you want. I served this dish with citrus salad, went very well together.
