Pineapple Rumba

Generous slices of fresh pineapple lightly grilled in rum and sugar.

Ingredients:

4 slices fresh pineapple (2cm thick), cored and peeled

8 tsp brown sugar

1/4 cup rum


Directions:

Marinate pineapple slices in rum for 30 minutes at room temperature.

Place on non-stick fry pan in one layer and sprinkle with half of the brown sugar. Grill about 10cm from heat for 3 mintues. Turn over and
sprinkle with remaining sugar; grill another 3 minutes or until
lightly browned.

Serve immediately.
