Pazzazed Pears

Virginia Hill, author of Zap to the Max, shows us how to make this low-fat, yet impressive looking pear dish, using the microwave.

Ingredients:

2 medium sized ripe Bosc pears, peeled

1 cup freshly squeezed orange juice

1 Tbsp Grand Marinier or orange liqueur

1 rind from one orange, shredded


Directions:

Mix together orange juice and liqueur in a small microwave-safe jug. Zap on high (100%) for 2 minutes.

Place pears in a microwave-safe container with the thicker portions at the outer edge of the dish. Cover the container and Zap on high (100%) for 4 minutes, turning pears over halfway through cooking time. Pears should be skewer soft.

Sprinkle with orange rind.

Variations:

Serve with toasted flaked almonds and low-fat vanilla yoghurt. Serving suggestions not included in nutritional information.
