Hazelnut and Banana Pikelets

Ingredients:

1 1/2 cup Self-raising flour

1/2 cup Rolled oats

1/2 tsp Bicarbonate of Soda

2 Tbsp Equal Spoonful

1/4 cup Dry roasted hazelnuts, chopped

2 Eggs

275 mL Buttermilk

1 tsp Lemon juice

200 g Banana, sliced


Directions:

In a food processor or large bowl, combine the flour, oats, bicarb and Equal.
Add the hazelnuts and make a well in the centre. Beat together the eggs and buttermilk and pour into the dry ingredients. Stir to just combine, then fold in the bananas.
Heat a non-stick lightly oiled pan and drop spoonfuls of mixture into the pan. When bubbles form on the surface flip over and cook for 1 minute, or until browned.
Serve up 3 pancakes warm with fresh ricotta or sprinkled with a little lemon juice and Equal for each person
