Danish Apple Pudding

Low-calorie, wheat free recipe incorporating the delicious taste of apples.

Ingredients:

1 can (400g) SPC bakers apples

50 g castor sugar

50 g butter, low-fat

1 tsp vanilla essence

50 g almond meal

1 medium egg, well beaten


Directions:

Preheat the oven to 180°C. Lightly spray a casserole dish with cooking spray.

Drain the apples and spread them evenly over the bottom of the dish.

Beat the butter, sugar and vanilla until light and creamy with mixer.
Add the almond meal and beat until well combined. Add the egg and beat until well combined. Gently spoon the pudding mixture over the apples.

Place the pudding the oven for approx 30 minutes or until light golden and cooked when tested.

Serve hot with low-fat icecream or sweetened natural yoghurt.

I loved this recipe. the almond meal adds a light nutty taste and its easy to make!
