Banana & Apple Compote

Great way to finish a meal on a cool winter's day.

Suggestions:

Serve with yoghurt or ricotta cream and sprinkle of nutmeg.

Ingredients:

2 cup apple juice

1 Tbsp vanilla extract

1 cinnamon stick

4 ripe bananas, peeled, sliced

4 Tbsp non-fat yoghurt or ricotta cream (garnish)

1 tsp nutmeg (garnish)


Directions:

Simmer apple juice, raisins, vanilla extract and cinnamon in a saucepan for 5 minutes.

Add bananas, cover and simmer 8-10 minutes until tender.

Remove cinnamon stick before serving.
Serve with yoghurt or ricotta cream and sprinkle of nutmeg.

Variations:
