A unique blend of passionfruit and apricot.

Ingredients:

1 Tbsp warm apricot jam

5 fresh passionfruit

375 mL can reduced fat evaporated milk

1/4 tsp Sugarine Liquid, extra

1/2 tsp Sugarine Liquid

1 egg white

1 1/2 tsp vanilla essence


Directions:

Mix together passionfruit, 1/4 teaspoon Sugarine and apricot jam.

Prepare icecream:

Place milk, egg white, essence and 1/2 teaspoon Sugarine into a food processor or mixmaster and process until thick and fluffy.

Pour mixture into a freezer proof bowl and freeze until beginning to set around the edge.

Remove from freezer and beat until smooth. Stir through 2/3 passionfruit sauce and return to freezer until firm.

Use remaining passionfruit sauce over icecream.
