A delicious alternative to traditional high fat ice cream. This version has practically no fat. Try serving with fresh fruit or yoghurt.

Ingredients:
5 g gelatine
3 Tbsp water
6 Tbsp sugar
3 cup skim milk, 0.01% fat
3 tsp vanilla essence, immitation
Directions:Mix gelatine with boiling water and stir until it dissolves.
Dissolve sugar in skim milk over a medium heat without letting the mixture boil.
Remove from the heat and add the gelatine mixture.
Pour into a shallow container and freeze until the mixture has set but not frozen solid.
Mix with an electric beater until the mixture is white and fluffy. It should be at least double its original volume. Freeze until solid.
Variations:
Try adding light yoghurt when you beat the mixture for a fruity flavour.
