Fancy a change from a traditional pudding, particularly on a hot summerís day? Treat your family with this delicious ice cream pudding, packed with fruits and nuts.
16 glace cherries, finely chopped
2 Tbsp glace ginger, finely chopped
4 Tbsp raisins
1/2 can of pineapple pieces in natural juice, drained
4 Tbsp brandy
1/2 cup whole canned chestnuts
12 meringues, crushed
1 L reduced-fat ice cream, softened
Place first five ingredients in a microwave-safe bowl, cover and heal on high for two minutes, mix well and then stand for a further ten minutes for brandy to soak into fruit.
The fat content of this recipe will depend on the type of ice-cream you use.
