Summer Fruits Compote

The flavours of summer bathed in a delicious red wine syrup.

Suggestions:

The secret to this recipe is to cover and refrigerate for 12-24 hours before serving.

Ingredients:

3 nectarines, washed, sliced

3 peaches, peeled, sliced

1 punnet strawberries, hulled, sliced

1 cup Red Wine

1 cup sugar

2 1/2 cup water


Directions:

To prepare the Red Wine Syrup:
Combine red wine, sugar and water in small saucepan.
Bring to a boil, remove from heat.
Chill in refrigerator until cold.

Transfer syrup to large bowl.Add nectarine, peach and berry slices to the syrup.

Serve compote in chilled bowls.

Variations:

Simple Syrup can be used instead of Red Wine Syrup.
Ingredients: 1 cup sugar and 3 1/2 cups water. Use same preparation as for Red Wine Syrup.
