Cherry Jubilee Parfait

Layers of creamy rice, cherries and jelly in parfait glasses.
To serve top with ricotta cream and a wafer.
1 1/2 cup cooked Sunwhite Calrose rice
1 Tbsp reduced fat margarine
1 1/2 cup lowfat milk
1/2 cup sugar
1 medium can cherries
1 sachet diet port wine jelly crystals
Place rice in saucepan with butter, milk and sugar, simmer, stirring occasionally, till creamy, about 15 minutes. Cool.
