Mango and Avocado Rice Paper Rolls

Forget greasy appetizers! Make these fresh and tasty rice paper rolls instead.
1 under-ripe mango (240g)
1 Lebanese cucumber
1 avocado (180g), sliced
2 spring onions
12 rice paper wrappers
2 grilled skinless chicken breasts, sliced
1/4 cup mint leaves, torn
8 Tbsp sweet chilli sauce (for dipping)
Peel the mango, remove the flesh and slice it thinly. Cut the cucumber and spring onion into 8cm-long thin straws.
