Halloween Quiche

Pumpkin quiche with a low-fat, crunchy base.

Ingredients:

500 g cooked pumpkin

1 onion, finely chopped

2 lean rashers bacon, chopped

1 garlic clove

2 Tbsp parsley, chopped

250 g cottage cheese

2 eggs

1/2 cup lowfat yoghurt

1 pita bread


Directions:

Preheat oven to 200C.

Combine bacon, onion and garlic and microwave on HIGH for 2 minutes until tender.

Beat eggs with cottage cheese and yoghurt. Mix thoroughly with pumpkin, parsley and bacon mixture.

Spray quiche dish lightly with non stick spray and line with pita bread.

Pour in mixture and bake for 40 minutes.
