Curried Chicken Pasties

These are excellent served hot or cold. Ideal for packed lunches.

Suggestions:

If you use the remains of a bought BBQ chicken, make sure you remove the skin and fat.

Ingredients:

300 g cooked chicken, finely chopped (1 3/4 cups)

95 g uncooked rice (1/2 cup)

150 g celery (2 sticks), finely chopped

1 carrot, finely chopped

1 capsicum, finely chopped

100 g mushrooms, finely chopped

2 tsp fresh tarragon

2 Tbsp parsley, finely chopped

1 tsp fresh sage

1 tsp curry powder

1 tsp 'Lite' or table salt

1 tsp freshly ground black pepper

3 cup Low Fat Fibre Pastry (375g)


Directions:

Pre-prepare 3 cups of Low Fat Fibre Pastry.

Roll out Low Fat Fibre Pastry and cut into 12 circles with a 17cm plate.

Place 1/3 cup of filling on each half, moisten outer edge with water, fold over and seal. Cut 2 small slits in each for steam.

Place pasties on baking trays. Bake in moderate oven for 30 to 40 minutes or until lightly brown.

I also cooked this with the uncooked rice and the result was inedebile! I will try again with par cooked rice.

Very tasty, will definitely make them again. I was skeptical about putting the uncooked rice in them, but I did as the recipe said and I''m glad I did. The uncooked rice soaked up the juices that would have come out of the mushrooms and other vegies, and in that process the rice cooked nicely. The pastry is a very tasty alternative to normal ''unhealthy'' pastry, a handy one to know about.
