Ingredients:
2 large (50g) eggs
2 100g cans Garlic & Pepper John West Tuna Tempters, drained
1 Tbsp olive oil
2 baby bok choy, chopped
2 spring onions, shredded
125 g baby corn (fresh) split lengthways
1 medium carrot, cut into thin sticks
1 Tbsp soy sauce, salt-reduced
4 lemon wedges for garnish
Directions:Beat the eggs and stir in tuna.
Heat a non-stick frying pan and fry tuna mixture in ¼ cup batches to make 6 mini omelettes. Keep warm.
Heat 1 tablespoon oil in the same frying pan and stir-fry vegetables; add soy sauce. Serve vegetables with the omelettes, garnished with lemon wedges.
Variations:
Garnishes are not included in the nutritional analysis.

oil=20g fat =39g fat or 19.5 per serve i dont think so john west... this recipe is total CRAP
By: robertm - 2008-11-24 I tried this same recipe with another brand of Tuna and it was cheaper and tasted just as good!
