
Roast Chicken with Cherry Seasoning

Ingredients:1.60 kg whole chicken, excess fat removed 250 g canned, pitted black cherries 2 1/2 cup (175 g) stale breadcrumbs 1 Tbsp horseradish cream 1 Tbsp grated lemon rind 1 egg, lightly beaten 1 stick celery, chopped 1 Tbsp chopped fresh parsley 2 tsp cornflour 2 tsp water 1 Tbsp light soy sauce Directions:To make cherry seasoning, drain cherries and reserve ¾ cup syrup for sauce. Combine cherries and remaining ingredients in a bowl. Mix well. To make sauce, blend cornflour with water, combine with reserved syrup, soy sauce and shallots. Add to a pan and stir over heat until sauce boils and thickens slightly. Author:
