Roast Chicken with Cherry Seasoning

Make roast chicken really special with this unusual twist to a family favourite.

Ingredients:

1.60 kg whole chicken, excess fat removed

250 g canned, pitted black cherries

2 1/2 cup (175 g) stale breadcrumbs

1 Tbsp horseradish cream

1 Tbsp grated lemon rind

1 egg, lightly beaten

1 stick celery, chopped

1 Tbsp chopped fresh parsley

2 tsp cornflour

2 tsp water

1 Tbsp light soy sauce


Directions:

To make cherry seasoning, drain cherries and reserve ¾ cup syrup for sauce. Combine cherries and remaining ingredients in a bowl. Mix well. To make sauce, blend cornflour with water, combine with reserved syrup, soy sauce and shallots. Add to a pan and stir over heat until sauce boils and thickens slightly.

Fill chicken with cherry seasoning, secure opening with skewer, tie legs together, tuck wings under. Place chicken on wire rack in baking dish. Bake in moderate oven for 1½ hours or until well browned and tender. Serve chicken with warm sauce.
