Prosciutto Chicken and Seedless Watermelon Salsa

A light, delicious chicken dish, with a fresh, tangy salsa on the side.
You can use any type of watermelon in this recipe, but we recommend seedless variety for ease of preparation.
4 chicken breast fillets, no skin, approx 150g each
8 sage leaves
8 slices prosciutto
250 g seedless watermelon flesh, cut into 2 cm cubes
175 g white seedless grapes
4 green onions, finely sliced
1 small red chilli, seeded and finely chopped
1 tsp grated ginger
2 Tbsp freshly squeezed orange juice
Preheat oven to 200°C. Lay the chicken breasts out flat and place two sage leaves on each one. Wrap two slices of prosciutto around each fillet. Lightly spray a baking dish and bake for 20 minutes or until cooked through.
