A light, delicious chicken dish, with a fresh, tangy salsa on the side.

Suggestions:

You can use any type of watermelon in this recipe, but we recommend seedless variety for ease of preparation.

Ingredients:

4 chicken breast fillets, no skin, approx 150g each

8 sage leaves

8 slices prosciutto

250 g seedless watermelon flesh, cut into 2 cm cubes

175 g white seedless grapes

4 green onions, finely sliced

1 small red chilli, seeded and finely chopped

1 tsp grated ginger

2 Tbsp freshly squeezed orange juice


Directions:

Preheat oven to 200C. Lay the chicken breasts out flat and place two sage leaves on each one. Wrap two slices of prosciutto around each fillet. Lightly spray a baking dish and bake for 20 minutes or until cooked through.

Meanwhile combine the salsa ingredients and toss gently to combine. Cover and refrigerate until ready to serve.

Serve the chicken breasts whole or thickly sliced with the salsa.

Variations:

Delicious served with steamed green vegetables. Nutritional information does not include serving suggestions.
