
Mushroom and Chicken Coq au Vin

Ingredients:1 kg chicken pieces, no skin 1 salt and freshly ground black pepper, to taste 200 g bacon rashers, rind removed and diced 400 g cup mushrooms, chopped 1 medium onion, finely chopped 2 cloves garlic, crushed 2 Tbsp plain flour 1 cup white wine 1 cup chicken stock, salt-reduced 6 tsp sprigs fresh thyme Directions:Spray oil in a large heavy-based non-stick frying pan over medium-high heat. Season chicken with salt and pepper. Add the chicken and cook for 2 minutes on each side or until golden. Remove to a plate. Add bacon, mushrooms, onion and garlic to the pan and cook, stirring often, over medium-high heat for 5 minutes. Stir in flour and cook, stirring occasionally, for 2 minutes.
