With tangy lemon, tomato and parmesan cheese, this healthy dish will make your mouth water.

Ingredients:
1 cup long grain rice
2 cup chopped cooked chicken, skin removed
1 cup tomato puree
1 cup chicken stock, salt-reduced
1 onion, sliced
2 lemons, sliced
2 Tbsp parmesan cheese, reduced-fat
1 chopped fresh parsley
2 clove garlic, crushed
Directions:
Cook rice according to directions on the packet. Spread in an oiled shallow casserole dish. Top rice with cooked chicken. Combine tomato puree, chicken stock and garlic. Pour over chicken.
Use onion and lemon slices to cover the chicken (use more if required). Cover casserole with a lid. Bake for 1 hour in 180°C oven. Add extra stock if required. Sprinkle with parmesan cheese and top with chopped parsley. Serve with steamed green beans and roasted potato, if desired.

By: bigjim - 2009-04-01 No good. Lemon doesn''t work unless its balanced in the dish and there is nothing balancing it in this dish. It''s a thrown together effort that really doesn''t build any sort of flavour base. A waste of good chicken. I''d drop this one guys
