Honey Chicken

Yield: 4 x 1 cup

Tender chicken sauteed in honey and sauce sauce.

Suggestions:

Keep the sodium content down by using low salt soy sauce.

Ingredients:

500 g skin-free chicken breast, cut into cubes

2 Tbsp honey

1 Tbsp soy sauce (lite, low salt)

1 tsp olive oil

1 Tbsp garlic, minced

1 cup carrots, sliced

1 cup onions, diced


Directions:

Using a non-stick frying pan or wok, saute the onions in olive and garlic. Add the chicken pieces and stir-fry until golden brown.

Add the carrots and continue stir-frying for 2 minutes. Add soy sauce, stir and leave to simmer for 5 minutes. Before serving add honey and stir through.

Serve on a bed of steaming rice.

This is absulutely gorgeous and with half a cup of Jasmine rice a really filling meal. The kids loved it too which is always a bonus.

Delicious! I changed the carrots for a cup of cauliflower and broccoli. Also added another tablespoon of soy sauce.
