Grilled Lemon and Garlic Turkey Chops

Ingredients:

4 Ingham Fresh Turkey Chops

1/3 cup lemon juice

1 garlic clove, crushed and finely chopped

1 Tbsp dijon mustard

1/2 tsp fresh lemon thyme leaves

1/2 tsp ground white pepper, or to taste

750 g desiree potatoes, cut into chunks

2 Tbsp olive oil

1/2 cup flat leaf parsley, roughly chopped


Directions:

Place the lemon juice, garlic, mustard and thyme leaves into a bowl and stir to combine. Season with a little ground white pepper.

Add the turkey chops and toss them in the marinade so that they are all well covered. Cover and refridgerate for one hour.

Place the potatoes in a large pot of cold water and bring to the boil. Reduce the heat and simmer for 20 minutes.

Heat grill and lightly spray with cooking spray. Place chops on the hot grill and cook for 3 minutes. Turn and cook for a further 3 - 4 minutes. Remove the chops from the grill and allow them to rest.

Drain the water from the potatoes and add the oil and parsley. With a fork roughly mash the potatoes until they are just broken up and the oil and parsley are well combined.

Spoon the potatoes onto 4 warm plates and top with the grilled turkey chops.

Variations:

Serve with a rocket salad. Nutritional information does not include serving suggestions.

Note: To further reduce the fat content of this dish, you can serve the grilled chops with lightly steamed vegetables or a salad rather than the suggested mashed potatoes.
