Grilled Chicken Salad with Grape and Walnut

Jazz up a chicken salad with grapes and walnuts!

Ingredients:

1 oil spray

500 g skinless chicken breast, sliced

1/2 cabbage, shredded

1/2 zucchini, grated

3 Tbsp light tartare sauce

1/2 red onion, finely sliced

1 1/2 cup seedless red grapes

40 g low-fat smoked cheese, grated

1/2 cup walnut, slightly crushed


Directions:

Spray a non-stick pan with oil spray. Grill chicken for 5 minutes each side or until golden and cooked through.

Combine cabbage, zucchini and tartare sauce. Fold in red onion and grapes. Divide cabbage mixture onto serving plates.
Arrange chicken over the top.
Add some grated cheese into the centre of each salad and sprinkle with walnuts to serve.
