Spicy chicken with mushrooms and sesame seeds.

Ingredients:

3 dried mushrooms

600 g skinless chicken pieces

4 tomatoes, peeled and chopped

4 shallots, chopped

1 capsicum, seeded and chopped

1 Tbsp chopped ginger

1 cup chicken stock

1 tsp sesame oil

1/2 tsp freshly ground black pepper, or to taste

1 Tbsp sesame seeds, toasted

3 cup hot, cooked Sunbrown Natural Calrose rice


Directions:

Cover mushrooms with hot water. Soak for 30 minutes. Drain well. Slice finely.

Place the chicken in a large saucepan with the mushrooms, tomatoes, shallots, capsicum, ginger, stock, oil and seasonings. Bring to the boil.

Reduce heat. Simmer, uncovered, for 25 to 30 minutes or until chicken is tender and cooked through. Serve on a bed of cooked Sunbrown Natural Calrose rice, sprinkled with sesame seeds.
