This low-carb dinner makes an easy mid-week meal.

Ingredients:

400 g pumpkin

1 large zucchini

15 g butter

2 rashers lean bacon, chopped

300 g chicken breast, chopped

2 tomatoes, chopped

3 tsp fresh lemon grass, chopped


Directions:

Cut pumpkin and zucchini into sticks. Microwave or steam pumpkin and zucchini until just tender.

Melt butter in a saucepan. Add bacon and chicken. Stir over medium heat until bacon and chicken is cooked. Add tomatoes. Cook for 2 minutes.

Add lemon grass, zucchini and pumpkin. Toss to combine, and serve immediately.

Variations:

Serve with toasted herb bread if desired. Serving suggestion not included in nutritional information.

i don''t have any lemon grass, and i do not like spice. what could i use as an alternate flavour base?
